Installation and instructions for using the Oven
WHAT SHOULD I KNOW BEFORE BUYING THE OVEN:
Ask the person( bricklayer ) who will install the oven, according to the local of installation, confirm the best fume exhaust solution according to the location.Choose the model that adapts to the location,the measure that we refer to from the oven ( example 100x100 ) is the outside measurement of the base, the inside of the oven has approximately 25/30 cm less ( handmade ).the best oven is the COOK, just smoke through the door, don´t lose heat and opens less cracks ( because there is no chimney ).The door and the chimney, exists in two kinds of material.
Consider access the place where you want to install, taking into account that the oven is a unique piece; heavy and hard to maneuver.

Install the oven in a dry place, insulated and covered, avoiding exposure to adverse weather conditions. The oven must be kept dry, free of moisture to avoid thermal shock (so as not to crack it).

Before the first utilization of the oven it is essential that after installation it is drying 5/6 weeks for drying and removing residual moisture resulting from the manufacturing, insulation and installation process.
How to make the drying?
The drying process is performed in three steps:
1 - Make a small fire (exemple: pine cones and small logs firewood with the door open (and chimney).
2 - Placing burning slowly, so heating is gradual up to 100 ° C at most. Leave approximately 2 hours, until ashes.
3 - Make to repeat the process 3 more times, after a minimum of 24 hours. From the 3rd heating can gradually increase the maximum temperature up to 250oC.
Respect the indicated temperatures for the expansion of the oven to be gradual. Thus avoids possible thermal shocks, which may cause cracks.
Place the firewood in the centre for better functioning. Leave the door open (and chimney).
Let the fire burn slowly, gradually putting the firewood when the wood "be on fire" should distribute it through the interior of the entire oven.
Let burn until the oven dome stay white brick.
Remove the remaining wood. Close the door and the chimney to avoid losing heat.
Use a thermometer to control the temperature. Not passing 300ºc when it´s on fire and 200ºc is the máximum temperature used for cooking (temperatures recommended for ovens greater than 100x100cm. For smaller measures, the temperature are smaller than indicated ).
To light the oven is best to use pine cones, eucalyptus barks and then go on adding branches of trees.
Avoid using green firewood and thick.
Warning and Precautions:
Never use water to lower the oven temperature or extinguish the fire, which may cause damage to the oven.
Do not put too much wood, which leads to sudden heating of the oven and may cause serious damage.
Do not use fuel to ignite the fire as it may contaminate your food.
